Prom all the above animals there must necessarily be a consid- erable amount of offal, and you naturally ask what becomes of that, d'he intestines are regularly taken away and made inter sausage skins, casings, and fiddle strings. 'The bags aie made into tripe, and a cjuantity of the blood is made into black puddings. These cleaned and ])rep)ared tri])es and puddings have been a great help in provid- ing chea]) meals for the poor, many of whom have large families. 'I'he places where these articlesmre^ir^red are regularly visited as to cleanliness ; the cpiality of the is carefidly nerted, and have been found on trial to be most wholesome food, and it is very rarely there is a fault to find. (In h'lance they are even sold as a delicacy, but are known by more savoury names.) What is not available for food is c arted away to the manure works and made into fertilisers. The skins are all treated by a fellmonger in the P.orough for various coverings, etc. I'he trotters are utilised for variotrs pur poses--the hoots arc* made into ghre, large bones into knife handles, etc., artd the wool oil the feet goes to make plasterers’ lirtre.
